Our Easy and Delicious Summer Bruschetta Recipe

Even if you’re spending the summer at home, our newest recipe will make you feel like you’ve been whisked away to Italy. Meet our easy and delicious summer bruschetta: Toasted bread meets summer basil, ripe and fresh tomatoes, and yummy mozzarella cheese! Not only is this recipe easy, it is also oh-so-delicious and the perfect way to enjoy the flavors of summer.

Easy Bruschetta Recipe

To make the bruschetta will, you need:

1 baguette (you can use any bread of your choice, I prefer sourdough or a french baguette)

1 pint of cherry tomatoes

1/4 cup of balsamic vinegar

1 tablespoon of extra virgin olive oil

1 garlic clove of minced garlic

1/4 teaspoon of salt

1/4 teaspoon of black pepper

3-4 fresh basil leaves

½ ball of sliced mozarella cheese

Instructions

Start by preheating your oven to 350 degrees. Slice the baguette into 1/2-inch slices, and then place them on a baking sheet. Bake for about 10 minutes, or until they are lightly browned.

Meanwhile, prepare the toppings. Start by chopping the cherry tomatoes into small pieces. Then, mince your garlic. In a small bowl, mix together the chopped tomatoes, balsamic vinegar, olive oil, garlic, salt and pepper.

Once the bread is crispy, add the optional mozzarella cheese and place your cheese upon the toasted bread slices. Next, spoon the tomato mixture onto each slice. Then, drizzle with the balsamic glaze and top with fresh basil. Serve immediately.

My favorite place to serve this ultimate summer appetizer is at an outdoor picnic or backyard event. Oftentimes, if I’m hosting a brunch or a light lunch, this delicious combination of toasted bread and fresh summer tomatoes pairs perfectly with morning mimosas and other light classic Italian appetizers.
